Made exclusively from grape must without any other component, slow acetification is produced, derived from a natural fermentation and a gradual concentration. Traditional Balsamic Vinegar develops its fragrance in the very long refinement in series of barrels (called batteries) of different types of wood. The specification forbids indicating exactly the years of ageing of the product, the indication "refined" in fact identifies not only a refinement not less than 12 years but alsos a high level of taste-olfactory of the product. The youngest product comes with an intense brown color, flowing syrupness, good body, bright acidity and discreet balance. It is perfect on omelets, vegetables, meat and in all applications where it is necessary to enliven the dish with a discreet but not overwhelming aroma and taste. Before packaging, in fact, each ampoule is examined by a commission composed of experienced tasters, which has the task of attesting the suitability for the use of the Protected Designation of Origin.
