Three useful starting methods

Straight bowl: sift 1–2g into a bowl, add 60–80ml water at 75–80°C and whisk briskly until finely frothy.

Hot latte: whisk 1–2g with 30–50ml water at 75–80°C, then add 200–250ml steamed milk.

Iced: whisk 1–2g with a little cool or room-temperature water, pour over ice and top with cold water or milk.

Taste before sweetening and adjust one thing at a time. Cooler water or a smaller dose can soften bitterness; a little more powder helps the tea hold its character in milk.
